Made exclusively from Sangiovese grapes from our vineyards, Zivas is a young, fresh, and easy-drinking wine that elegantly expresses our terroir.

Toscana IGT Sangiovese

GRAPES 100% Sangiovese.
VINIFICATION Grapes are selected in the vineyard and harvested by hand in crates during the coolest hours of the day, crushed and conducted in thermo-conditioned stainless steel fermentation tanks. After the start of the fermentation, the temperature is
raised gradually, up to a maximum of 26°C. The maceration on the skins is managed with daily déléstage operations and lasts about 10 days. After racking, the wine undergoes malolactic fermentation in stainless steel tanks. The wine is ageing for a 10 months period in concrete tanks on fine lees. Afterwards the wine is stabilised and bottled after the summer following the harvest.

TASTING NOTES
The color is bright ruby red with bright reflections. Aroma is fresh and fruity, with notes of morello cherry and other small ripe red fruits; in the background are present spicy nuances and suggestions of Mediterranean maquis. The wine has a balanced structure with round and fine tannins, complemented by excellent freshness and minerality. It is immediately and
pleasantly drinkable, but capable of surprising with its evolution over time.
FOOD PAIRINGS
Ideal with earthy first courses, and with Mediterranean white and red meat-based dishes.
SERVING TEMPERATURE
About 15 °C in medium size glasses.
